Peanut Butter Choc Chip Cookies   Super easy and refined sugar free Recipe

Peanut Butter Choc Chip Cookies Super easy and refined sugar free using granulated stevia from @natvianaturalsweetener I love this sweetener which comes from a plant, as it means I can enjoy more of the sweet treats I like without the calories and sugar rush. These cookies are also full of good fats in the peanut butter and chia seeds, and fibre from the coconut flour. I also use stevia sweetened dark choc chips

Peanut Butter Choc Chip Cookies
(Makes 12)
1/3 cup peanut coconut spread (or peanut butter)
2 Tbsp dairy free yoghurt
2 Tbsp coconut flour
1/4 cup granulated stevia @natvianaturalsweetener
1 chia egg (1 Tbsp chia seeds mixed with 3 Tbsp warm water and left for 15 mins to thicken)
1/2 tsp baking powder
1/4 tsp salt
2 Tbsp dark choc chips
Blend the peanut butter, yoghurt, Natvia, salt, baking powder and chia egg in a food processor.
Add the coconut flour and blend again. Should be thick.
Taste test and adjust as required
Stir through the choc chips
Using a Tablespoon measure, scoop out dough onto a lined baking tray
Press down to flatten
Bake for 10-15mins at 180C until lightly browned
Allow to cool slightly before transferring to a wire tray
