Quick one-skillet dish from @paleo_newbie_recipes – great as a hearty breakfast side or anytime meal.
3/4 lb. Italian sausage (mild or hot)
1/2 medium onion, diced
1 clove garlic, minced
2 Tbsp ghee or butter
1 large white-skinned sweet potato, peeled and diced
1 red bell pepper, seeded and diced
1 cup shredded carrots
3-4 cups baby spinach leaves
Handful of sliced Kalamata olives
@flavorgod Garlic Lovers seasoning
@flavorgod Everything seasoning
@flavorgod Himalayan Salt & Pink Peppercorn
1 avocado, sliced
In a large skillet over medium heat, brown sausage with the onions. Add garlic and cook one more minute. Remove contents and set aside.
In the same skillet, add 2 Tbsp ghee or fat of choice. Cook bell pepper and sweet potato over medium heat until potatoes are tender.
Add the cooked sausage, onions and garlic you set aside back to the skillet. Season as desired with Garlic Lovers, Everything, and a pinch of Pink Salt/Pepper. Stir 2-3 minutes to reheat and combine.
Finally stir in carrots, spinach and olives. Remove from heat and serve topped with avocado slices.
