Healthy S’mores Muffins . WHAT 1.5 cups any flour – I used a combo Of 1/2 cup flour, 1/2 cup almond meal, 1/4 cup amaranth flour, 1/4 cup ground flax seed) 1/3 cup coconut oil (or other) 1/3 cup unsweetened applesauce 2.5 oz. bittersweet chocolate, finely chopped 3/4 cup honey 1/4 cup pure cane sugar (if you like added sweetness) 1/2 cup natural unsweetened cocoa powder 1 egg, 1 egg white 1/3 cup buttermilk or any milk 1 Tbs. pure vanilla extract 1 1/2 tsp. baking soda 1/4 tsp. kosher salt Optional Filling: Use handful of mini marshmallows or 1/2 cup white chocolate morsels Topping Coconut whipped cream (may use low fat whipped cream) or cool whip Cacao nibs or mini dark chocolate morsels .
