Fried salt cod Mpakaliaros INGREDIENTS: -1kg-2lb salt cod -2 cups self-rising flour -2 cups of beer -Olive oil for frying DIRECTIONS: Rinse the fish under cold water and remove any scales or bones. Soak in cold water for at least 12 hours changing out the water a few times. Cut the fish into small pieces and set aside on a plate. In a large bowl, add the flour and whisk in the beer. Whisk the mixture to make a thick smooth batter. Fold in the chopped salt cod and mix well. In a large frying pan, heat the olive oil over high heat. Scoop tbsp- size mounds of mixture into the pan and fry, until golden. Drain on kitchen paper. Transfer to a platter and serve with Skordalia.(optional)
