Okay officially made my first spring/summer dinner of the year ️ Mom

Okay officially made my first spring/summer dinner of the year ️ Mom and I went grocery shopping today and I made us dinner had to show her these roasted leeks I made last week and I’ve been wanting to make this veggie ribbon salad for a while now With cilantro lime shrimp! Cilantro lime shrimp • defrost and remove skins. Heat minced garlic + @kouzinifoods olive oil + chopped cilantro in a pan on medium for 1-2 min. Add shrimp and cook about 3-5 min on either side or until it turns pink Roasted leeks • cut off stem and where the green leaves start branching out. Cut in half and soak/wash in a big bowl of water to remove any dirt. Dry w/ paper towels then toss with olive oil and season with garlic powder + ground pepper + @kouzinifoods siracha sea salt. Bake in oven at 400 for about 20-25 minutes. {next time I want to broil at the end for added crunch on the ends!} Veggie ribbon salad • use a vegetable peeler to peel a zucchini {ends cut off} from top to bottom. Repeat using a carrot. Add to bowl with red onion + white balsamic vinegar + sesame seeds + cilantro + feta cheese I can’t say enough about this salad!!! So refreshing & light with great flavor. Perfect summertime salad ? recipe.
