Stayed a little outside of Boston at @twist_of_lemons house last night and we were both salivating at the thought of veg-filled omelettatas in the morning STUFFED, now going to get a much needed massage after all our workouts/yoga/walking this past week Flight is later today too to head back home
Omelettata: add oil to a pan and sauté broccoli, onion and bell pepper until tender, about 5 min (Can add a splash or two of organic low sodium chicken stock to help moisten veggies instead of adding more oil). Add chopped tomatoes, large handful mixed greens and sauté for 1-2 minutes. Spray veggies one last time with oil, toss and pour 3 whisked pasture-raised eggs/seasonings over the top, making sure it covers the entire pan. Cook on medium for about 4 minutes then transfer entire pan into the oven on BROIL to cook another 3-4 minutes, or until fluffy and starting to brown ✨
