Taco Thursday! Also, honesty hour: the mind has been way too focused on calories.. which has left me out of balance. I’m back on the dietary exchange plan to get out of restrictive patterns and back to balance. Nutrition and balance over calories! What is in your food is what matters, fuel your body right, listen to it and it will love you back. Not to mention your mind will feel freedom. Already been a great day and mindset all around! So tacos that I was scared to eat because of calories are now seen as a great carbohydrate source! My two starches for part of my dinner exchange is two mini corn tortillas, then proteins of meatless crumbles and some black beans, some healthy fats as I spread the tacos with hummus, and veggies (cauliflower!)
