The humble avocado/tomato on toast combo with lots of himalayan salt and pepper. I loveeeeee bread – my favourites are wholemeal spelt sourdough, rye, soy and linseed and even white sourdough. After two years of being ‘wheat free’ and avoiding gluten like the plague I’m so happy now I know bread ain’t the enemy for me! Has anyone else been through a similar gluten free phase for IBS/diet/after being convinced by the media that gluten is the devil?! ? I most certainly was fooled by all three, tricked into thinking I had an intolerance or that bread would make me bloated or sick. I now enjoy bread daily and eat pizza, pasta fairly often! Of course I prefer baking with wholemeal flours like buckwheat, spelt and eating quinoa but I now don’t feel guilty for eating gluten when it’s convenient and when I want to :) recipe.
