Homemade lima bean cassoulet, spicy version using chipotle, chili powder, smoked paprika, cayenne, coriander powder, oregano and thyme. The beans were soaked in water with apple cider vinegar overnight prior to cooking them.
This is great for packed lunches and as a perfect leftover for those busy days when there’s no time to cook
